I love me some pork!
For this you will need:
4 boneless pork chops
2 tbs olive oil
salt & pepper for seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon Adobo
1 tablespoon parsley
1 cup Italian-style bread crumbs
1 cup grated Parmesan cheese
Preheat the oven to 400°. Brush the chops with one tablespoon of the olive oil and season generously with the salt & pepper.
In a small bowl, beat the two eggs, then add in the garlic powder, onion powder, Adobo, and parsley. Whisk until well combined. Set aside.
In a separate bowl, add the bread crumbs. Set aside.
In a third bowl, add the Parmesan cheese. Set aside as well.
Coat the chops completely with the cheese, patting to adhere to both sides.
Dip the chops into the egg-seasoning mixture, then coat completely with the bread crumbs. Make sure that both sides of the chops are covered completely.
Lightly coat the bottom of a baking dish with the remaining olive oil, before placing the pork chops into it.
Bake for 15 minutes, then flip each one gently over. Bake for an additional 15-30 minutes until they are golden brown.
**Don’t be stingy with the olive oil coating in the baking dish. The coating stuck to the pan a bit so my chops weren’t entirely coated. They were absolutely delicious though!
