Chicken & Stuffing Casserole

I’ve never been one for casseroles, but this one was really good, and so easy! I’m all about easy cooking, and we all love chicken!

For this you will need:

1 pkg. (6 oz.) Stove Top Stuffing mix for chicken
1-1/2 lb boneless, skinless chicken breasts, cut into bite-size pieces
1 can (10-3/4 oz. condensed cream of chicken soup
1/3 cup light sour cream
1 pkg. (16 oz.) frozen mixed vegetables, thawed and drained

Heat oven to 400°F. Prepare stuffing as directed on package. Mix remaining ingredients,

and place in 13″ x 9″ baking dish sprayed with cooking spray. Top with the stuffing.

Bake 30 minutes, or until chicken is done.

A definite keeper! This one was delicious! Next time I make it, I’ll make two, so we can have leftovers!
