Never a big fan of spinach, I wasn’t planning on liking this recipe. Boy was I wrong! It’s not only great as a vegetable for your meal, leftovers can be warmed and used as a dip for tortilla chips. Delicious!
For this you will need:
2 (10 oz.) packages of frozen spinach, thawed and drained
2 cups cottage cheese, small curd
4 tbs butter, cut into pieces
1-1/2 cups American cheese, cubed
3 eggs, beaten
1/4 cup flour
1 tsp salt
Grease a crock pot liner. Combine all ingredients.
Pour into the crock pot.
Cover and cook on low for 4 hours or on high for 1 hour. It’s done when the edges start to get brown.
