Need something quick and easy to make, but want it to be filling? This hamburger soup will fill you up, and warm your insides.
You will need:
1 lb hamburger
1 onion, diced
2 cloves garlic, minced
2 medium potatoes, peeled and diced
3-1/2 cups beef broth
1 can (28 oz.) diced tomatoes with juice
1 can condensed tomato soup
1 teaspoon italian seasoning
salt and pepper to taste
3 cups mixed vegetables, frozen
If you listened to one of my Tuesday tips, your hamburger is already cooked in a 1 lb container that you’ve thawed out. If not, then you need to brown it, the onion and the garlic. Drain any fat.
Add potatoes, broth, tomatoes, tomato soup,and seasonings. Simmer covered for 10 minutes.
Stir in vegetables and simmer 15-20 minutes or until potatoes are tender.
Saltine crackers made it a delicious, filling and warming soup on a chilly evening.
