I don’t really enjoy cooking, and I enjoy cleaning up after even less, so an easy, one pot meal sounds like a great idea to me!
For this you will need:
1 lb ground beef
1-12 oz. box rotini pasta
2 cups chicken broth
1 onion, diced
2 tbs minced garlic
2-14 oz. cans diced tomatoes
2 cups shredded cheddar cheese
1 tsp dried oregano
1 tsp salt
1/2 tsp pepper
Preheat your oven to 425°. Add the ground beef into the bottom of a greased 9″ x 13″ casserole dish. Bake for 25 minutes and remove it from the oven. Drain some of the fat from the beef.
Pour the pasta onto the beef and spread into an even layer, then add the onion.
Add the garlic and the diced tomatoes.
Now add the oregano, salt, pepper, and chicken broth. Make sure that the pasta is just submerged in the liquid. Feel free to remove some broth or add some water to achieve this.
Top the casserole with the shredded cheddar cheese before placing it into the preheated oven to cook for 30 minutes, or until the pasta is tender.
Serve with a side salad.
Notes: My husband Errol mentioned that he’d like it if next time I added a layer of pepperoni slices.
