I love asparagus but it’s usually so expensive. This week it was on sale at our local Shaws grocery store so I picked some up.
For this you will need:
One bunch of fresh asparagus
1 tbs minced garlic
3 tbs olive oil.
2-1/2 tbs grated Parmesan cheese
1 tsp sea salt
1/2 tsp black pepper
1 tbs lemon juice
Preheat the oven to 425°. Wash and trim the asparagus and put it into a shallow baking dish. Drizzle with the olive oil. Toss to evenly coat. Sprinkle 1-1/2 of the grated Parmesan cheese, the minced garlic, the salt, and the pepper over the asparagus. Toss again to evenly coat. Arrange the asparagus in a single layer.
Bake for 12-15 minutes until just tender. Drizzle with 1 tbs lemon juice and toss again before serving. Sprinkle with 1 tbs Parmesan cheese. So delicious!
