Need to throw something in the slow cooker quickly, and not worry about it the rest of the day? If so, this is the recipe for you! I knew I was going to have a busy day. I had several things I had to do on the computer, and I was watching Aly that day, because daycare was closed, so I needed something quick and easy to throw into the cooker, and not think about it again until supper time. My ingredients were simple, two boneless chicken breasts and a can of pineapple chunks.
For every two breasts you wish to cook, just add a can of pineapple chunks. I put my slow cooker liner in, put the chicken breasts on the bottom, then dumped the pineapple chunks on top. I did add a cup of pineapple juice to mine, just because I wanted it really juicy, and pineapple flavored.
Cover it, set the cooker to low for 7.5 hours, and walk away. When the timer went off, I had the juiciest, pineapple chicken I have ever tasted.
I added some plain rice and corn to complete the meal.
