Strawberry Banana Bread

This bread made my house smell delicious while it was baking, and everyone hungry!

For this you will need:

1/2 cup (1 stick) butter, softened
1 cup sugar
2 large eggs, beaten
3 ripe bananas, mashed
2 cups flour
1 tsp baking soda
1/2 tsp salt
1-1/2 cups fresh strawberries chopped & tossed in 1 tbs of flour

Preheat the oven to 375°. Spray two 9″x 5″ loaf pans with nonstick spray. Set aside.

In a large bowl, cream the butter and sugar together until light and fluffy.

In a small bowl, beat eggs using a fork. In a medium bowl, mash the bananas, and in the fourth bowl mix the chopped strawberries with the tbs of flour.

Add the eggs to the sugar mixture and beat until combined. Add the mashed bananas and mix well.

Mix the three dry ingredients; flour, baking soda, and salt. Slowly add the dry ingredients to the banana mixture and mix until flour is just combined. Do not overmix! Fold in the floured covered strawberries.

Pour batter into the prepared loaf pans and bake for 15 minutes. Reduce heat to 350° and bake for an additional 30 minutes until edges are slightly brown or until toothpick inserted into the center comes out clean. Let cool completely before removing from loaf pans.

This is where I usually insert the picture of the finished dish. Unfortunately, this is what happens at my house when you leave something good on the counter to cool.

I guess the next time I should take the picture the minute it comes out of the oven. It looks safe to say the bread was a hit!
